About us

It’s Christmas 2008. We’re preparing our traditional "caramels mous", according to the recipe passed down to Sonia from her grandmother, and gifting them to our friends and loved ones. Our friend Peter, a master confectioner, suggests they may be better if made using “double crème de Gruyère” *. He says we might even be able to sell them – if we improve the packaging. No sooner said than done, we head back to the kitchen to put his suggestions to the test and our adventure has begun.

Using a medium saucepan, on the electric stove, we produce our first small scale batch and make our first sales during the Chocolate Festival in Versoix.

Our recipe now perfected, we scale up production, using a larger pan and a gas camping stove borrowed from Norbert. The caramels are cut by hand using a standard kitchen knife.

Our next material upgrade sees the arrival of a metal basin and a professional-grade gas cooker. Using a marble slab and a caramel knife, we’re able to achieve cleaner cuts.

Driven by our limitless curiosity, we experiment with variations to the recipe – some proving more successful than others – and our selection grows to include more flavours.

Having chosen our name CARABON – a contraction of caramel and bon (“good”) – our website is online. We count on you to evaluate our products and let us know if the name is deserved.

Our promise: quality

All our caramels are made using “double crème de Gruyère” *, sugar, sweetened condensed milk and glucose syrup.

We use only the highest quality ingredients to complete our range, including organic bourbon vanilla, organic cinnamon, organic dried coconut, fresh, untreated mint, Esperanza Fairtrade coffee, Bonnat chocolate, Grand Marnier, Chivas Regal whisky and Austrian Stroh rum.
